RICE QUICHE WITH PEAS

A delicious and original recipe for rice quiche would be perfect for a vegan lunch with friends.
Ingredients
for 4 persons
carnaroli rice cooked in salted water
400g
VEGGE
150g
frozen peas
100g
soy milk
4 tablespoons
nutritional yeast flakes
2 tablespoons
extra virgin olive oil
1 tablespoon
chopped shallot
½
nutmeg
to taste
salt
type 1 flour
Instructions

In a bowl, combine all the ingredients and mix well until you get a homogeneous mixture.

Grease two single-serving cocottes with extra virgin olive oil and cover the base with a dusting of flour.

With the help of a spoon, place the mixture in each cocotte and bake.

Cook in a fan oven at 180 °C for 20 minutes.
