RICE ROLL WITH VEGETABLES AND SPINACH AND TOMATO MAYONNAISE

An unusual recipe for those who are tired of omelettes. Rice rolls with vegan egg substitute and spinach. Delicious, satisfying, and healthy.
Ingredients
sushi rice soaked in water for 30 minutes
350g
Vegge
1 boutle
spinach
350g
vegan mayonnaise
150g
tomato paste
2 tablespoons
black pepper
1 pinch
salt to taste evo oil
to taste
water

Instructions

Drain the rice. Put rice in a pot with water and a pinch of salt, cover with a lid and bring to a boil. Cook 👩‍🍳 for 7−8 minutes. Turn off the heat and let the rice rest for another 10 minutes.

Add Vegge to the pan, mix with a spatula and let rest for a few minutes.

Season the spinach with a drizzle of oil, salt and a pinch of black pepper.

Spread the rice on a sheet of cling film and fill with veggies and spinach. Roll everything up and squeeze tightly. When the food gets cold, put it in the refrigerator for at least 2 hours.

Mix mayonnaise and tomato paste and stir well. Remove the roll from the refrigerator and cut into thick slices. Serve with the tomato mayonnaise.
